**So my plan was to do this in two separate posts, but I didn't take any pictures of the filling and frosting so I will just do it all here!**
I found this recipe for Snickers cupcakes by Amanda, at Kevin and Amanda, and I had to try them. So tonight I started with just the cake, and will finish the rest tomorrow.

These cupcakes came out so moist and fluffy, I loved them and I am really not big into chocolate cake. Adding the sour cream and pudding really did make this cake delicious, and the batter was amazing as well.
(Sorry these pictures are absolutely terrible quality, because I don't have my camera on me.)
Ingredients
1 box devil's food cake (I used Pillsbury, with the added pudding)
1 cup of milk
1 cup of sour cream
4 eggs
1/2 cup of vegetable oil ( I used a stick of margarine and they turned out fine)
1 box of pudding
1. Preheat the oven to 350°F
2. I just mixed everything together in one bowl until combined with my hand mixer.
3. I didn't have an ice cream scoop on hand, which is what I would normally use. But this batter was so thick that I just put it into a large ziploc bag and cut off a corner. Then I piped it in about 2/3 full.
4. Bake regular sized cupcakes for about 20 minutes and mini cupcakes for 10-12 minutes, or until they bounce back when touched.
5. Remove cupcakes and cool.
This recipe resulted in 18 regular sized cupcakes and 18 minis.
The mousse was so delicious and simple, I will definitely use this again in other recipes. There was also plenty of it left over so you may be able to half the recipe, if you don't taste test it too much!
Next was the frosting which I followed the recipe almost exactly, using margarine instead of butter and adding some milk and extra cocoa powder.
The final step was to top it off with some chopped snickers. I chose to slice them instead which made a much more appealing cupcake! I almost didn't add the snickers, and just went with a chocolate cupcake all around, but the snickers added so much great flavor and texture, it was definitely worth it.
